Crazy Crust Cobbler ~ Simple, Quick & Delicious!

Fresh picked squash, melons, tomatoes, cucumbers, and blackberries; yum, yum!

There was a knock on the door and I answered to find a bucket full of fresh picked blackberries; I knew just what to do with them!

When I saw that bucket full of blackberries I immediately thought of a hot blackberry cobbler smothered with a big scoop of vanilla ice cream, so I got busy and made a few; some for us and some to share.

My crazy crust cobbler is so simple, quick and oh so delicious!
(So folks tell me.)


This recipe can be made using a can of fruit pie filling or fresh fruit and is YUMMY with fresh picked blackberries!

Start with 2 cups fresh fruit sprinkled with 3/4 cup sugar and refrigerate overnight.  Sometimes I do this several hours before, stirring often.

You'll also need:
1 cup sugar
1 cup flour
1 tsp. baking powder
1/8 tsp salt
1 egg
1 stick butter
Non-stick spray to coat pie dish
Pie dish

Sift the dry ingredients together.
As luck would have it, my sifter stopped sifting, so I used a wire whisk to combine the ingredients and make sure there weren't any clumps, etc.

Melt butter and combine with egg, then add to dry mixture and combine well.

Using a spatula spread over the berries.

Once berries are covered, bake at 350 degrees for 35 to 40 minutes.

  6. Hmmmmm? That recipe looks similar to mine, but mine has milk and then you pour it over the butter and place the fruit on top and the crust cooks up around the fruit.
